I'm looking to get a cookware set and wondering why I should/should not get non-stick, but I also want to do things right.

I am in need of a new cookware set and am trying to decide which kind to get. I have tried an older version of their cookware and really liked it, but have not tried the newest versions.

I'm considering purchasing a durable cookware set and want the benefits of non-stick cooking but don't want to use teflon. Some options I've looked at are anodized aluminum versus stainless steel or copper bottoms. Any suggestions?
