Please explain pros/cons of different cookware?

I am looking for quality cookware that heats evenly, doesn't discolor food or interfere with the flavor, and is not high maintanence. I have been researching copper, stainless steel, aluminum, analon(?), but what are the differences?

What are some brands of high quality cookware?

I want to buy some high quality cookware. I like everything about Saladmaster except the price. Does anyone know any other brands that I could check out??
I am looking for something stainless steel with a copper or aluminum core for even heat distribution.
