How do you prevent food from sticking to stainless steel cookware?

I want to get a professional set of cookware but I'm afraid of food falling apart and burning the food and pans so do you have any pointers on how to cook on stainless steel?

    Use Pam or any other cooking spray. And perhaps you could take an adult education course in cooking at your local community college…

    If you order your cookware out of food service catalogs that sell proffessional cookware to restaurant kitchens it is not stainless steel but cast aluminum, which seasons sort of like cast iron.
    I have been in many professional kitchens and dealt with 4 different food service companies and none sold stainless steel cookware.
    I think if you get a good heavy set you may be able to season them to not stick but I have never had any luck with those at all.
    I personally like cast iron or cast aluminum and I try to avoid teflon as well.
    I also buy my kettles one at a time as needed as the sets always include weird extras that you pay for and end up in the back of the cupboard collecting dust.
    Just my opinion.
