		<description>Stainless steel, but with an aluminum or copper core. Stainless steel by itself it a poor conductor of heat, although it&#039;s a wonderful cooking surface, easy cleanup and is dishwasher safe. 

Copper is superior for heat conductivity and retention, but is very expensive and high maintenance. You can get the same benefit by buying cookware that&#039;s a triply ply: a copper core sandwiched between stainless steel layers.

You don&#039;t have to spend the big bucks on All Clad. There are online  suppliers of cookware that are less expensive. Plus, you may have a restaurant supply store in your area. Most sell to the public.</description>
